Marsala Wine Marinara
With this marinara sauce, the authentic San Marzano tomatoes lend a vibrant, fresh taste that serves as the perfect backdrop for the complex notes of the Marsala wine. The wine infuses the sauce with a subtle sweetness and a hint of nuttiness, creating a harmonious balance with the acidity of the tomatoes. To further enhance the flavor profile, we incorporate finely chopped aromatics such as onion and garlic. These ingredients add a savory depth to the sauce, their pungent notes mellowing out during the cooking process to leave behind a gentle, aromatic whisper that complements the other flavors beautifully.


Recipe
- Heat oil in a medium-large pot on medium heat. Add onions and cook for about 5 minutes until translucent. Add the minced or pressed garlic, cooking for another minute. 
- Add your marsala wine to your onion and garlic mixture. Let the wine reduce down in the uncovered pot, for 7 minutes. 
- Add peeled canned tomatoes to the pot, crushing the tomatoes with a wooden spoon. Add seasonings to the mixture, bringing to a boil and then simmering to a medium-low heat for 45-60 minutes depending how thick you like your sauce and how watery your tomatoes are. Stir occasionally. 
- Once the sauce has thickened, remove it from the heat. Taste and adjust seasoning , adding fresh basil and/or red pepper flakes if you like. If you find the sauce a bit too acidy for your taste, add a pinch of sugar. If preferred, you can puree or just partly puree the sauce with an immersion blender. Serve over your favorite pasta, in a casserole, with meatballs or on pizza.

- 1 28oz can of San Marzano peeled tomatoes 
- 2 tablespoons good quality Extra Virgin Olive Oil 
- 1 medium yellow onion 
- 4 cloves garlic, minced or pressed 
- 1/4. c of marsala cooking wine (you can adjust more, to your preference) 
- 1 teaspoon of fine sea salt - more to taste 
- 1 teaspoon of garlic powder 
- 1 teaspoon of ground oregano 
- 1 teaspoon of red pepper flakes
