Mardi Gras Banana Fosters Stuffed French Toast
You don't have to visit the Big Easy to get this French toast. Celebrate like it's Mardi Gras with this decadent French toast. This brunch delicacy is filled with honey flavored cream cheese and a bananas fosters topping that wont have you singing the blues!
Recipe
Take the softened cream cheese and honey, mixing together in a small bowl.
To make the French toast, take 2 slices of bread. Top one piece of bread with the cream cheese mixture. Take the other slice of bread topping the other, to make a sandwich.
Whisk eggs, cinnamon, and heavy cream in shallow baking dish.
Dip the sandwich into the egg mixture, coating both sides.
Heat your flat top grill or sauté pan over medium heat and melt about a tablespoon of butter, or enough to coat the bottom of the pan. Add the dredged sandwich into the pan, browning on both sides.
Continue to do the same, assembling, dredging, and cooking the sandwiches.
To make the bananas foster, in a saucepan set over medium heat, add the butter, brown sugar, cinnamon, and nutmeg. Cook and stir until the butter is melted, a couple minutes.
Peel and slice the bananas into ½” thick pieces. Add to the skillet and cook for 3 minutes on the first side, or until the bananas are golden on the bottom. Flip all the banana slices and cook for two minutes on the other side, until soft.
Remove the pan from the heat and add the rum. Return the pan to the stove and tilt to catch the flame and let the alcohol burn. Once the flame burns out, the sauce is done.
Serve the French toast with the bananas, chopped walnuts and spoon the extra sauce over the top with a drizzle of maple syrup. Dust with powdered sugar.

FOR THE FRENCH TOAST:
8 pieces of butter style bread
4 eggs
1/3 cup of heavy cream
1/2 tsp of ground cinnamon
1/2 cup of butter (1 stick)
1 - 8 oz block of softened cream cheese
1 - 1/2 tbsp of honey
Powdered sugar for dusting
FOR THE BANANNA FOSTERS TOPPING:
1/2 cup unsalted butter
1/2 cup light brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
3 large bananas (ripe but not mushy)
1/4 cup dark spiced rum
1/2 cup of chopped walnuts
