Lemon Kissed Blueberry Belgium Waffles

Move over blueberry pancakes, it's waffle time! Wake your loved ones up with these delectable blueberry waffles. These waffles are truly a pillowy blueberry dream! With ease, waffle mix is combined with ripe blueberries and lemon zest, to give you the most scrumptious waffles you ever put your lips to. Trust me, you're going to want to try this!

Recipe
  1. Set oven temp to warm - 170F for keeping cooked waffles warm when done making.

  2. Make waffle batter according to box directions. Add in 1 1/2 tsp of lemon zest and blueberries. Fold, until combined.

  3. Spay waffle iron and scoop batter onto it. Cook until done.

  4. Keep continuing to make waffles and keep warm in the oven.

  5. Make syrup by combining syrup, blueberries, butter, lemon zest, and honey into a small pan. Continue to cook for 5 minutes.

  6. Take waffles out of oven and top with syrup, adding an additional pad of butter and freshly grated lemon zest.

Ingredients
  • Box of Hungry Jack Pancake Mix (follow the instructions for waffles, not pancakes) - You can use a homemade recipe but I personally love the taste of Hungry Jack. If it's not broken, why fix it!

  • Spray butter

  • 1/2 stick of butter

  • 1 cup of maple syrup

  • 1 cup of blueberries (for your waffle mix)

  • 1 cup of blueberries (for your syrup)

  • 1 - 1/2 tsp lemon zest - for waffle batter

  • 1 tsp lemon zest - for syrup

  • optional: a tbsp of honey or fresh honey comb
