Chorizo and Sweet Onion Burrito
The Chorizo and Sweet Onion Burrito is a savory and satisfying culinary delight that combines the bold, smoky flavors of seasoned chorizo with the sweet, caramelized goodness of Vidalia onions. Wrapped in a warm, soft flour tortilla, this burrito features a hearty filling of spicy chorizo sausage, Mexican rice, buttery scrambled eggs, green bell pepper, and crunchy tortilla chips. Morning, noon, or night, this meal does not disappoint, anytime during the day!
Recipe
Prepare Mexican rice. When finished, set aside.
Sauté green bell pepper with onions in olive oil, until softened, about 5 minutes.
Add chorizo to onion mixture and cook until browned.
Set chorizo mixture aside in separate bowl and in the same sauté pan, add butter.
In the melted butter, add whisked eggs to sauté pan, and cook (scrambled style).
Season eggs with chipotle powder, salt, and pepper. Once cooked, set aside.
Warm tortillas in a sauté pan, to make warm and pliable.
Top each tortilla with a portion of the chorizo mixture, scrambled eggs, and white American cheese.
To finish, add tortilla chips on top of the filling (for texture).
Fold all sides of the tortilla and roll into a burrito.
Top with queso, salsa, fresh peppers, cilantro, and guacamole.

4 large burrito sized flour tortillas
Shredded white or sliced American cheese
8 Large eggs (scrambled)
9 oz package of pork chorizo
1 green bell pepper (diced)
1 large Vidalia onion (sliced thinly)
Mexican rice of your choice (homemade version or prepackaged, whichever you prefer)
Bag of tortilla chips
4 tbsp of butter
1 tbsp of olive oil
Salt
Pepper
Chipotle powder
Optional: Melted queso, salsa, cilantro, fresh jalapeno slices, guacamole.
